Avery Head Chef Triumphs at NACC North Regional Final

David Oswin, Head Chef at Loxley Park, has thrilled judges once again at the 2019 Northern Regional Final, winning top place with his innovative twist on a simple curry main dish and a fruit salad dessert.

His thoughtful approach to the competition and clever inclusion of herbs, spices and textures along with wonderful mouth-watering flavours have earned David a coveted place in the NACC National Finals in June for the third time, an incredible achievement.

Head of Culinary for the Avery Group that operates Loxley Park, Simon Lawrence, commented, “At Avery, our high culinary standards are instrumental in supporting our resident’s well-being. This is a thoroughly deserved award for David whose dedication, expertise, and culinary innovation have earned him great respect. David produced fabulous dishes with great presentation, and to have come away with this award for the third time is excellent.”

The competition is demanding and chefs are tasked to create an innovative, tasty two-course menu (main and dessert) suitable for someone in a care setting that clearly demonstrates strong nutritional understanding of the ingredients used, aptitude and flair in flavour combinations, technical execution and presentation. And, they must do it all sticking to a strict budget of no more than £2.25 per head (based on three portions) and in just 90 minutes!

Neel Radia, national chair of the NACC, says: “This competition is specially designed to challenge care chefs and showcase their talent and specialist skills and the knowledge they have of nutrition and dietary requirements, which is vital in a care setting. Those competing all believe food is at the centre of quality care and are dedicated to making sure they deliver the very best.”
